Chosen by Sharp Knives Malta

Traditional Japanese craftsmanship for precise poultry preparation.

The Touroku Sakai Honesuki 150mm is a specialist Japanese boning knife handcrafted in Sakai, Japan. Forged from Shirogami #2 (White Paper Steel #2), it is designed to break down poultry with speed, precision, and minimal waste.

Its distinctive triangular blade, rigid construction, and razor-sharp edge make it the preferred choice of many professional chefs for deboning chickens, trimming meat, and working accurately around joints.

Fitted with a traditional magnolia wood handle and genuine buffalo horn ferrule, it combines authentic Japanese craftsmanship with exceptional cutting performance.

Handcrafted in Sakai – Japan's Historic Knife-Making Capital

For over 600 years, Sakai has been one of Japan's leading centres of knife making. Professional chefs around the world rely on Sakai knives for their refined geometry, outstanding sharpness, and traditional craftsmanship.

Every Touroku Sakai knife reflects this heritage, preserving the techniques that have made Japanese kitchen knives famous worldwide.

Who This Knife Is For

Perfect for:

  • Professional chefs
  • Butchers
  • BBQ enthusiasts
  • Serious home cooks
  • Anyone regularly preparing whole poultry

Ideal for precision work where a chef's knife feels too large or lacks the control needed around bones and joints.

Why You'll Like It

Shirogami #2 (White Paper Steel #2)

Forged from one of Japan's purest traditional carbon steels.

Hardened to approximately 61–62 HRC, it offers:

  • Exceptional sharpness
  • Extremely fine edge formation
  • Easy sharpening
  • Outstanding cutting feel
  • Traditional Japanese performance

Its fine grain structure allows the blade to take an incredibly keen edge, making it a favourite among professional chefs and sharpeners.

Traditional Honesuki Geometry

Unlike flexible Western boning knives, the Honesuki features a rigid triangular blade designed specifically for poultry preparation.

It provides:

  • Excellent control around joints
  • Strong pointed tip for precise work
  • Rigid blade for controlled cuts
  • Greater accuracy when separating meat from bone
  • Confident handling during butchery

The sturdy blade is designed to follow cartilage and joints with precision—not to cut through large bones.

Built for Poultry Preparation

The Honesuki excels at:

  • Breaking down whole chickens
  • Removing breasts and thighs
  • Separating wings
  • French trimming
  • Removing tendons and connective tissue
  • General poultry and meat preparation

It allows cleaner, more efficient work while reducing waste.

Magnolia Wood & Buffalo Horn Handle

The traditional Wa handle features lightweight magnolia wood paired with a genuine buffalo horn ferrule.

It provides:

  • Excellent balance
  • Comfortable grip
  • Lightweight handling
  • Precise blade control
  • Traditional Japanese aesthetics

The forward-balanced design keeps the knife agile during detailed work.
