€179,00

The Shizu Gen VG10 Damascus Nakiri 160mm is a Japanese vegetable knife made for cooks who spend serious time preparing fresh produce. Its tall rectangular blade and flatter cutting edge make chopping vegetables fast and controlled, while the combination of VG10 Damascus steel, Kurouchi and Tsuchime finishes gives this Nakiri a distinctive Japanese character.

Made for Vegetable Preparation

Unlike a general-purpose chef’s knife, the Nakiri is specifically designed for vegetables. Its flatter edge allows excellent contact with the cutting board, making it particularly effective for push cutting and straight chopping.

The 160mm blade is compact and agile while still providing plenty of cutting area for onions, cabbage, carrots, herbs, root vegetables and everyday produce. The additional blade height also gives comfortable knuckle clearance and makes it easy to scoop and transfer chopped ingredients from the board.

VG10 Damascus Stainless Steel

The blade features a VG10 stainless steel core with a visible Damascus pattern along the lower section. VG10 is widely used in quality Japanese kitchen knives because it combines excellent sharpness and edge retention with good corrosion resistance.

For everyday users, this means strong Japanese cutting performance without the more demanding maintenance required by traditional carbon steels.

Kurouchi & Hammered Tsuchime Finish

This Nakiri has a particularly striking contrast between the dark upper blade and the polished Damascus section near the cutting edge.

The Kurouchi finish provides the darker, rustic appearance, while the hammered Tsuchime texture gives the blade additional depth and individuality. Together they create a unique design that makes the knife instantly recognisable within a kitchen collection.

Lightweight D-Shape Pakka Handle

A D-shaped Pakka wood handle complements the tall blade while keeping the knife light and manoeuvrable. The dark wood grain and black ferrule continue the understated aesthetic of the Kurouchi finish and provide the traditional Japanese-style feel many cooks look for in a Wa-handled knife.

Who Is This Nakiri For?

The Shizu Gen Nakiri is ideal for vegetarians, plant-focused cooks and anyone who prepares a lot of vegetables. It also makes an excellent specialist second knife alongside a Gyuto, Santoku or Bunka.

If most of your preparation involves vegetables and you enjoy a flatter cutting action rather than rocking the knife, a Nakiri can quickly become one of the most-used knives in your kitchen.
