The Kotetsu Tsuchime knife series is a refined line from Yasuda Hamono, a forge in Seki, Gifu, Japan. Made of VG10 stainless steel, this series offers not only the well-known sharpness and durability, but also a remarkably high-quality finish. What sets these knives apart from other tsuchime (hammered) and damask knives is the extra attention to detail. The blade is mirror polished, which is not only aesthetically pleasing but also helps with cut resistance. In addition, the choil (the transition at the heel of the knife) is carefully rounded and polished, providing a more comfortable grip for precision work. The handle is made of pakka wood, which is reminiscent of walnut in appearance, but more resistant to moisture and abrasion due to its layered construction.
